
The Cheese Club at the Co-op
The Cheese Club is a monthly cheese subscription club for Co-op members hosted by Helen McIntosh, Co-op cheese buyer and local chef.
This is an opportunity to get first dibs on new, specialty, and seasonal cheeses from the Co-op. When you sign up for cheese club you agree to purchase an 8 oz. piece of the “Cheese of the Month” or upgrade to any size piece. The Cheese of the Month will be pre-selected and emailed to cheese club members and published here with the price and a brief description. Members have the option to opt out of any month. Cheese pickup will be once a month around the 15th.

Give feedback after tasting the cheeses and vote on whether the Co-op should stock each cheese.

Earn a $5 reward coupon after three months of cheese club participation.

Cheese tasting party at the coop twice annually for cheese club members. We will sample cheeses from the Co-op and pair them with other delicious items (spreads, preserves, fruits, crackers, nuts, chocolates, etc...) available at the Co-op. Members can bring cheeses or cheese pairings to share. ​

Next Cheese Tasting Party

The Cheese Club tasting party is an opportunity to meet up with other club members, sample and talk cheese! We will gather at the Co-op and sample cheeses together. Anyone is welcome to bring a cheese or accompaniment to share or just come and enjoy! Please RSVP!

March's Cheese is Oak Smoked Gubbeen, Ferguson Farm, County Cork, Ireland
~$14.50 per 8 ounce wedge
Cheese club members will receive an email when the cheese comes in. Your cheese will be in the walk-in with your name on it!

Oak Smoked Gubbeen is made by 6th generation dairy farmers in Schull, County Cork, Ireland. Their grazing season is extended because of the warm air from the gulf stream brings green grass early and their winter feed consists of farm grown silage, hand selected nuts and certified GMO-free feed.
This is a semi-soft washed rind cheese with a bouncy texture. Before being delicately smoked with oak it is aged and washed with salt water and white wine to tend the delicate pinkish tan rind with a nutty scent.
With a hint of funk from lactobacilli leuconostoc--the bacteria that gives sauerkraut and kombucha their characteristic funk--this cheese mellows with age and smoke, carries aromas of nuts, mushrooms, bog, butter and forest floor.
The perfect cheese to add to your St. Patrick's Day celebrations or pair with a Stout or Porter from our curated selection of LOCAL BEER and CIDER!!!
Made from pasteurized cow's milk.
