This is an opportunity to get first dibs on new, specialty, and seasonal cheeses from the Co-op. The Cheese of the Month will be pre-selected and emailed to cheese club members and published here with the price and a brief description. Members have the option to opt out of any month. Cheese pickup will be once a month around the 15th.

Comte 1.jpg

Comté is an Alpine cheese produced in the Jura mountain region of France just across the border from Switzerland (where Gruyere is produced.) Comté cheese is made of raw milk from Montbéliarde or French Simmental cows. It is the most consumed cheese in France and has AOC status which protects its traditional production and quality. The Comté we will be sampling is aged for 24 months and is from the Rivoire Jaquemin affineur. The 24 month Comtés have a dryer and more crystalline texture than the 12-18 month aged with the roasted aromas standing out.
