
The Cheese Club at the Co-op
The Cheese Club is a monthly cheese subscription club for Co-op members hosted by Helen McIntosh, Co-op cheese buyer and local chef.
This is an opportunity to get first dibs on new, specialty, and seasonal cheeses from the Co-op. When you sign up for cheese club you agree to purchase an 8 oz. piece of the “Cheese of the Month” or upgrade to any size piece. The Cheese of the Month will be pre-selected and emailed to cheese club members and published here with the price and a brief description. Members have the option to opt out of any month. Cheese pickup will be once a month around the 15th.

Give feedback after tasting the cheeses and vote on whether the Co-op should stock each cheese.

Earn a $5 reward coupon after three months of cheese club participation.

Cheese tasting party at the coop twice annually for cheese club members. We will sample cheeses from the Co-op and pair them with other delicious items (spreads, preserves, fruits, crackers, nuts, chocolates, etc...) available at the Co-op. Members can bring cheeses or cheese pairings to share. ​

The Cheese Club tasting party is an opportunity to meet up with other club members, sample and talk cheese! We will gather at the Co-op and sample cheeses together. Anyone is welcome to bring a cheese or accompaniment to share or just come and enjoy! Please RSVP!
July's Cheese of the Month is Ossau Iraty, Basco Bernaise AOC, from French Basque Country

MILK TYPE: Raw Ewe Milk
STYLE: Alpine
MILK SOURCE: Basco Bearniase sheep, one of the 3 breeds of sheep allowed for the AOC production of this cheese.
FORMAT: 10 lb Wheel
AFFINAGE: 3-12 Months
TYPICAL PROFILE: Buttery flavor with toasted hazelnut aroma, dense ivory paste, natural rind.
I am hoping this cheese is similar to the Vermont Shepherd's Verano! These farmstead cheeses are also made daily on the farm, by the farmer, with the untreated milk from the farm’s own flock. Cheeses are still made by hand as they were in the Middle Ages. They are long and carefully matured in collective salting tubs for 3-12 months. The natural rind is hand brushed with dry salt.
