Irish Soda Bread is a traditional quick bread made without yeast, using baking soda as the leavening agent. It's typically made with flour, baking soda, salt, and buttermilk, which reacts with the soda to create rise. The result is a dense yet tender loaf with a slightly tangy flavor. Some versions include raisins or currants for a touch of sweetness, while others stay savory. It’s best enjoyed warm with butter or alongside soups and stews.

Ingredients
1 cup, 140g, brown rice flour (or white, if you prefer)
1 cup, 140g, sorghum flour
1 cup, 120g, tapioca flour
3/4 tsp baking soda
1 tsp baking powder
1 tsp salt
1/2 tsp xanthan gum
2 Tbsp. sugar (or less if you prefer)
1 egg, beaten
1 1/3 cup buttermilk
1/2 cup raisins ay need a splash more to make the dough hold together)*
Preparation
Step One: Preheat oven to 425ºF.
Step Two: Mix all the dry ingredients together.
Step Three: Mix the egg and the buttermilk together.
Step Four: Stir the wet ingredients into the dry ingredients, and knead to form a ball. Pat into a circle that is about 1 1/2” thick.
Step Five: Place the circle of dough on a sheet of parchment paper on a baking sheet and cut a deep X into the top of the dough. Don’t be too dainty with this incision as the X allows the bread to expand as it bakes and rises.
Step Six: Bake at 425ºF for 10 minutes and then turn the oven down to 350º and bake for another 25 minutes until the bread is golden and makes a hollow sound when tapped on the bottom.
