Lemon Dill Rice is a light, flavorful dish made with fluffy rice infused with fresh lemon juice, zest, and chopped dill. The lemon adds a bright, tangy kick, while the dill brings a fresh, slightly grassy note. Often served as a side dish, it pairs especially well with grilled fish, chicken, or Mediterranean and Middle Eastern dishes. It’s simple, refreshing, and easy to make ahead.

Ingredients
4 cups uncooked rice (any sort but white Basmati is delicious)
2 Tbsp dried granulated lemon peel
4 tsp. dill weed
2 tsp dried chives
2 tsp salt (optional)
2 Tbsp plus 2 tsp chicken bouillon powder or vegetable broth powder
1 Tbsp lemon juice powder
2 Tbsp dried parsley
1/3 cup wild rice (optional)
Preparation
Combine all ingredients and store in a large airtight container until ready to cook (this is a good make ahead meal).
To cook:
Combine 1 cup plus 2 Tbsp mix with 2 cups water and 1 to 2 Tbsp of butter in a saucepan. Bring to a boil and cover tightly.
Simmer 15 to 20 minutes, or however long the type of rice you chose needs to cook until water is absorbed. Turn off the heat, remove the lid and fluff the rice. Let it sit for a few minutes before serving.
