About the Recipe

A hearty breakfast casserole made with savory sausage, fluffy eggs, melted cheese, sautéed peppers, and onions—perfect for a flavorful, protein-packed start to the day.

Ingredients

  • 2 lb. breakfast sausage

  • 1 cup onion, diced 

  • 1 cup peppers, diced 

  • 12 large eggs

  • 1 cup sour cream or yogurt

  • 1/2 cup heavy cream

  • 1 1/2 cups shredded cheese, divided (

  • 1 tsp. kosher salt

  • 1/2 tsp. black pepper

Preparation

Step 1 - Preheat oven to 350°F. Lightly coat a 9- x 13-inch baking dish with nonstick cooking spray.

Step 2 - Heat a large skillet over medium heat. Add sausage and cook, breaking it into small pieces. Cook until brown and slightly crispy on some pieces, 12 to 15 minutes. Drain off most of the grease, and set aside. Do not clean out skillet.

Step 3 - Add peppers and onions to the same skillet over medium-high heat, and sauté for 2 to 3 minutes. Remove from heat, and set aside.

Step 4 - Combine eggs, sour cream, heavy cream, 1 cups cheese, salt and pepper in a bowl. Whisk until well combined.

Step 5 - Add the sausage and peppers and onions to the bowl with the egg mixture. Whisk everything to combine

Step 6 - .Pour mixture into prepared dish. Top with remaining 1/2 cup of cheese.

Step 7 - Bake for 20 to 30 minutes or until the edges are set.
